Food Truck: Cilantro & Perejil

Our food truck serves authentic and traditional Mexican food that is accessible to all. We prepare our dishes daily from scratch using only fresh, locally sourced ingredients.

The “guajolote,” our signature Mexican sandwich, has its origins stemming from one Christmas Eve in the early 20th century. According to legend, on that Christmas Eve, electricity was first brought to our hometown, Tulancingo, Hidalgo. A group of engineers working for the electrical company in town were hungry after a long day of work, but nearly all the restaurants in town were closed because of the holiday. The engineers approach one small restaurant just before it closed, but the friendly owner explained that she did not have much to offer from her menu; all she had were leftovers. The engineers, hungry as they were, asked the owner to fix them meals with the leftovers. The owner prepared for them sandwiches using white bread, fried beans, and enchiladas with tomatillo sauce. So was born the “guajolote de navidad,” or “Christmas turkey” in English. It is now simply called a “guajolote," and it is customarily served with a variety of modern toppings.

At Cilantro & Perejil, we bring back nostalgic Mexican dishes using the highest quality ingredients with some pre-Hispanic twist. We also take very seriously our duty to the environment, providing biodegradable containers and utensils.
